Potato Root in the Equalizer

The little roots that grow out of potato always seemed odd to me. They are not supposed to be there. Seeing them on an aging potato in the cupboard, I decided to literally look into one. What I saw in this root were familiar cell structures, not vastly different from the cells I have seen on all my other tours. The microscope, after all, is an equalizer that breaks all the variety in the world down into common elements.
