Lens-like Tissue inside a Cucumber

There are many forms of vegetable tissue where the cells concentrate water in their cells. The cells usually have strong optical qualities. Viewing them is like looking at a lens or prism. The cucumber cells are very optically active which mean microscopy of them is very tricky. Possible microscopy of these tissues is very limited.
