As you might guess the cells of a banana peel are floppy and pretty disorganized. In addition the problem is that the top of the peel is pretty far from the bottom and the depth of field of a microscope is very short. So you can get the top in focus but the bottom will be out of focus. They are relatively large and their shapes interfere with each other on the skin structure. There are some regular cell structures which can be noted but most of the structure is not very regular.
